HOT PEPPERS
Originally from Central America, the hot pepper is one of the most antique domesticated plant, for the pre-columbian it was a sacred and primary element of their diet. After the European discover of America, it spread in the rest of the world becoming an important part of mediterrean, asiatic and African diet.
Our hot peppers comes from two different species, “capsicum annuum and capsicum chinenses”. The firsts, of which we grow jalapeños, are not so spicy, but the sharpness comes intensively, theirs taste is similar to a spicy pepper, with white flowers favour. The capsicum chinense are more spicy, but the heat comes more gradually, more round and carved shaped, have a sweet and spicy flavour, with citrus, melon and tropical fruits aftertaste, that changes from typology, in our case, habanero orange, red and yellow, chupetino, fatalji, scorpion red and yellow, carolina reaper. The fields are on the hill, 600 Mt, on a sloop, where once layed the family vineyard, today, an hot peppers vineyard, since it’s a clayey terrain and the plants are in long rows on a sloop, facing the mountains.

Mix of jalapeño and habanero, spicy and direct, fruity and acidic at the right point. Liquid thickened consistency to dose drop by drop. Color red intense to orange, on the palat persistent spicyness that trigger without covering the dish it is added to; white flowers after taste. Barbecue, red and white meat, oly fish, chevice and any kind of spicy preparation.

Habanero orange and honey, a perfect bond that completes the tasting profile of this hot pepper, the sweetness allows to estinguish the excess of spiciness.

Mix of chinense hot peppers and cocoa beans. Ancient recipy, pre-columbian inspired and surprising, the intensive and spicy aroma of the peppers bonds with the typical cocoa notes. The cocao butter inside the beans helps to mitigate the heat in excess. Liquid thickened consistency to dose drop by drop. Color dark red to brown. From meat to fish, spicy dishes, with a special attention to desserts and creative cooking.
